Our final menu

Happy Family Day, Everyone!

This week is Happy Rabbit’s final meal service menu. I would like to thank you all for the kindness and support you have shown us since we opened the shop a year ago. It has been a real pleasure serving all of you.  This isn’t the end, however. We have a couple of new projects on the horizon that I think you’ll like. We’ll send you all the information about them when they’re ready to go. Until then, here’s this week’s menu:

  1. Chickpea Romesco (a Spanish inspired sauce of roasted peppers and almonds) with saffron-garlic quinoa
  2. Smokey grilled vegetables with sautéed collard greens and baked beans
  3. Thai red curry with mixed vegetables and Jasmine rice
  4. Kale salad with braised Portobello mushrooms, barley, Brussels sprouts, walnuts, dried cranberries and a lemon-Dijon dressing
  5. Buffalo Chick’n Caesar – Romine lettuce, spicy vegan ‘chicken’, red cabbage, carrots, celery, croutons, red onions and our Caesar dressing

The soup this week will be a Creamy Potato and Leek ($5 a bowl)

Pickups will be on Monday

Hello Everyone! With Family Day this weekend, Happy Rabbit pickups will move to Tuesday. The shop will be closed on Monday, but will be open 11-3 on Tuesday. We hope you enjoy what we have for you this week!

Here’s this week’s menu:

  1. Black beans in chipotle adobo with steamed cilantro-lime Quinoa
  2. Tamarind Lentils with basmati rice and coconut-lime cabbage
  3. Chimichurri Chickpeas with roasted red peppers and baked sweet potatoes
  4. Kale Salad with pepperoni-style tempeh, croutons, olives, sweet onion, basil and a tomato vinaigrette
  5. Baby spinach roasted cauliflower and pesto, green peas, walnuts and cherry tomatoes

  2. Rawket Fuel – a mix of dates, cacao, coconut – $1.50 ea

Hello Everyone! We have some news here at Happy Rabbit that we need to share. It’s with a heavy heart that we have decided to close the business at the end of February. It has been a lot of fun, but the time seems right to do it. We still have three more menus for you, and we think you’ll enjoy our selections. Thank you for all the support you have provided us.

Here’s this week’s menu:

  1. Cashew, Pineapple and Vegetable stir-fry with Jasmine Rice
  2. Quinoa and Chickpea Pilaf with Mexican-style chili braised cabbage
  3. French-style rustic White Beans and mushrooms with tomato-caper millet

  5. Baby spinach with grilled miso apples and Brussels sprouts with a creamy miso dressing

Happy Monday, Everyone! Another week is here again, and with it another menu from Happy Rabbit. We hope you like what we have for you this week!

  1. Pumpkin baked pasta with caramelized onions, herb breadcrumbs and sautéed greens
  2. Jamaican stew with black-eyed peas, sweet potato and plantain, with cilantro-lime cous cous
  3. Tempeh Waldorf Sandwich – artisan bread, tempeh, fat-free aioli, celery, apple and walnuts, with a side of raw vegetables and red pepper dip
  4. Smoke House Salad – massaged kale topped with quinoa, white beans, tomatoes, cucumber, olives, artichoke, red onion, mint and pepitas with a smoked paprika dressing
  5. Super Hero Salad – baby spinach with white and wild rice, chickpeas, tomatoes, corn, peas, spiral carrots, beets and zucchini with a toasted sesame dressing

Hello Everyone! We’re going to be starting something new this week. Happy Rabbit will now be open for dinner on Fridays, from 4 until 7. We’ll be serving a fresh menu each week of hot, nutritious entrees. Look for the first menu to be posted on Facebook. Here’s our meal service menu:

  1. Mexican vegetable chilli with homemade cornbread
  2. Mediterranean sweet potato ‘meatloaf’ with steamed vegetables
  3. Roasted chickpeas, spinach and sundried tomatoes on brown rice with an herb gravy
  4. Massaged Kale salad with Barley Tabbouleh
  5. Baby spinach salad with roasted squash, apple, dried cranberries, pumpkin seeds and a ginger-miso dressing

  2. Chocolate Hazelnut macaroon – $1.50 ea

Time for some favourites!

Good morning, Happy Rabbits! We thought it was about time to bring back some of your favourite dishes from the last 4 months of meals. This is a selection of dishes that have been requested by you or been the ones that have received the best feedback. Hope you enjoy!

  1. Tempeh Reuban Sandwich – apple and mustard marinated tempeh strips with tomato, baby spinach, sauerkraut, Russian-style dressing, on artisan bread with a side salad
  2. Organic Quinoa with hummus, tomatoes, baked sweet potato, chopped kale, currents and hemp seeds
  3. Green Thai Curry with Jasmine Rice
